Kitchen & Waste Area Process
Source Separation Process
The critical step in the effectiveness of any solution is the separation of food waste at source.
By separating food waste as it is generated and maintaining this separation throughout the process has a number of significant benefits to waste minimisation.
We have developed our systems over 7 years to fit with kitchen best practices, and our training of staff is simple and effective.
By separating food waste from other wastes, we unlock significant and valuable savings for the companies we work with;
- Increase in other recyclable streams
- Food cost savings
- Reduced Carbon Footprint
Bokashi is a method of treating food waste using anaerobic bacteria.
Developed in Japan, “bokashi” literally translates as fermented food waste. A very specific selection of beneficial anaerobic bacteria are brewed together with molasses and wheat bran and then fermented. Once the fermentation process is complete, the “bokashi” is dried to form a stable additive, that ‘activates’ when added to fresh food wastes in our sealed digester bins.
Our Bokashi additive is important for kick starting the recycling process in the kitchen or waste area, by;
Stabilising the food waste, as the bokashi starts a fermentation of the food wastes within the sealed bin. Allowing for food waste to be effectively stored for up to 1 month.
No Malodour as the fermented food waste does not rot within the bins.
No Vermin as the bokashi treated waste is in sealed bins and the fermentation process prevents the attraction of vermin.
Studies show implementing source separation of food wastes increases recovery of other recyclable by up to 25%.
Separating food waste out at source greatly reduces contamination within the waste system. International studies have shown that by minimising contamination results in up to a 25% increase in value from the recovery of other recyclables.
We add other organic (high carbon) wastes into our pre-composting recipe to ensure we achieve the optional C:N ratio in our mix.
This crucial foundation step in our process ensures that we begin with the correct ratio of carbon-rich & nitrogen-rich materials, to:
- Produce a proper thermophilic compost row/pile
- Ensure an end product with a balanced N:P:K
- Provide our worms with an optimal feedstock at the end of the process

Our “Fork to Farm” initiative highlights what responsible restaurants are doing to minimise food waste.
Monitoring & Controls are vital to this process.
In order to ensure our customers receive a reliable and consistent product from our facilities, we regularly monitor our processes and ensure control points are checked off during the pre-composting phase.
Temperature: Maintain 50°C for a minimum of 7 days.
Moisture: Target levels of 40-50% by weight.
Oxygen: The row/pile must remain aerobic.
